SMOKED SALMON PLATTER

Try this simple refreshing summer dish perfect to enjoy on your own or when entertaining friends.

SERVES  4  

PREPARATION  Under 30 minutes

Ingredients

  • 300 g small new potatoes
  • Salt and freshly ground black pepper
  • Lettuce
  • 1 tablespoon chopped fresh dill, plus extra to garnish
  • 100 ml crème fraîche
  • 200 g smoked salmon, thinly sliced

Method

1. Cook the potatoes in boiling salted water for 15 minutes or until tender. Drain well.

2. Meanwhile, wash and prepare your lettuce leaves.

3. Stir the chopped dill into the crème fraîche, then season to taste.

4. Arrange the lettuce leaves and potatoes on plates, then top with the salmon slices. Grind over a little pepper and garnish with dill. Serve with the herby crème fraîche.
