Gluten-Free Mediterranean: Rustic Heirloom Tomato Salad

Try this fantastic recipe for Rustic Heirloom Tomato Salad shared with Active Retirees by Helen Tzouganatos from her cookbook Gluten-Free Mediterranean.

Ask anyone who has travelled to the Mediterranean about the tomatoes, and they will generally respond with ‘extraordinary, heaven, nothing compares’. I have found all of this to be true. Contributing factors are the mineral-rich volcanic soil, plentiful sunshine and strong demand by locals for outstanding quality in seasonal produce. They are so flavoursome that they only require the best-quality robust extra-virgin olive oil and sea salt flakes to dress them up. To recreate this rustic salad at home, look for the plumpest, juiciest heirloom tomatoes at your local greengrocer and let the quality of the produce shine.



1 kg ripe heirloom tomatoes (various colours), cut into 1 cm thick slices
1 small red onion, sliced into thin rounds
1 small yellow capsicum, sliced into thin rounds
handful of baby basil leaves
sea salt flakes and freshly ground black pepper
extra-virgin olive oil, for drizzling


Arrange the tomato slices on a platter. Top with the onion, capsicum and basil and season with a sprinkling of salt and pepper. Drizzle with olive oil to serve.
